I’ve been pretty good about eating my vegetables lately, but this means I have to be very creative because I really don’t LIKE vegetables…
I made an error when cooking the other day… I meant to slice up some zucchini and grill them up for some awesome tastey goodness… So I pulled out the large green vegetable, sliced it up, and realized….um….that’s a cucumber.
Oops. Now I KNOW the difference between the two- but I guess I wasn’t paying attention. It happens. I’m busy.
So I decided what the hell- let’s grill it up! I mean the slices were thick and beautiful and people grill tomatoes, right?
So I drizzled them in olive oil, seasoned with pepper and garlic salt; and grilled them for 3 minutes on each side. 
And then for funzies- I decided to add some low fat mozzarella, but I’m telling you this was not needed.

The result was heavenly. It was juicy and tender and melty… I literally almost ate the entire cucumber. So now this is my go to when I need a vegetable in a quick amount of time.
