In an effort to eat cleaner, I’ve tried to become more creative in the kitchen and turn some of my old favorites into cleaner healthier recipes.
When I was little, my momma made Salmon Patties that were fried in oil. They had egg, celery, bread crumbs, and canned salmon and when fried- were delish. Ahh the comforts of southern cooking.
Now that I’m fatter older I just can’t eat anything fried any more. So here is my version:
Ingredients:
1 Canned Salmon- I use Honey Boy
2 stalks of celery
1/4 cup diced red onion
1/4 cup corn tortilla chips
2 egg whites
1 tbs of lemon juice
1 tbs of minced garlic
a splash of Franks Hot sauce for flavor – optional
Salt and pepper to taste
First you will need to clean the salmon. If you can use fresh cooked salmon; this would be ideal- but in a pinch- canned salmon works just fine. The problem with canned salmon is that it looks positively disgusting when you open the can. Don’t let this turn you off! Pull out those bones and extra skin and proceed! It will look better I promise!
Cleaned salmon should look like this:
You can substitute Tuna if the canned salmon freaks you out. I won’t judge.
Next you will need to crush your tortilla chips until you have about 1/4-1/2 cup.
Now you can cut your veggies. I LOVE LOVE LOVE my little handi chopper. It’s kinda small, but so convenient. I just dump my veggies into this little gadget and chop chop chop!
Viola!

NOW you can dump it all in the bowl and mix it.
We are getting there!

Next you take your mixture and make patties about the size of your open palm. This is about 4 oz. Put these bad boys on a griddle or pan on medium heat and cook about 3-5 minutes on each side. I used a bit of Pam to spray the pan first.
These can be served hot or cold. I just take them to work with me and eat them cold.
